Royal Paan Icecream
INGREDIENTS
4 Betel Leaves
1 Lemon
2 Teaspoon Saunf
1 Teaspoon Elaichi Powder
3 Teaspoon Gulkand
3/4 Cup Sugar
3 Teaspoon Cornflour
1 Kg Whole Milk
250 gms fresh Cream
This is my favorite ice cream which is digestive as well.I have been very fond of paan since my childhood and this Paan flavored icecream which my Mom Used to make drives me crazy.I can eat the full tub without sharing with anyone else.My kids are equally crazy for this icecream and In summers, I am forced to make this every week .
Recipe
- Take four Betel Leaves (Paan Leaves) and wash them properly.
- Crush the leaves and put them in a grinder.Add juice of a Lemon And grind to a smooth puree.
- Strain it in a strainer to extract the juice out of it and keep it aside
- Grind the Saunf And Elaichi In the grinder to make a powder.
- Add the Gulkand ,Elaichi And Saunf to the Paan juice that we made earlier.
- Mix all the Ingredients well and keep it in the fridge till we prepare the milk for Paan Icecream
- You will need 1 kg Full Cream Milk.Take 1 cup milk in a glass and put the remaining milk to boil.Add 3 Teaspoons Cornflour to the milk in the glass and mix it properly
- Boil the remaining milk and add 3/4 Cup sugar and let it simmer for 5 minutes on low flame.
- After 5 minutes add the Cornflour milk and again keep it on sim for 10-15 minutes stirring continuously.After 15 minutes switch of the gas and keep the milk aside till it comes to room temperature.
- When the Milk comes to room temperature add the Paan And Gulkand Mix to it. Now Add the cream .Mix well and pour the mixture in a dish and keep it in the freezer for 1.5 to 2 hours.After 2 Hours take it out and beat it with the help of a beater.This is done to make the ice cream more creamy .
How To Make Paan Icecream
Take four Betel Leaves (Paan Leaves) and wash them properly.
You can buy Paan Leaves from any local Paan Vendor.

The Puree or Paste would Look Like this
Strain it in a strainer to extract the juice out of it and keep it aside
Now Take 2 Teaspoons Sauf
And Half Teaspoons Elaichi seeds.(You can also use elaichi Powder)
Grind the Saunf And Elaichi In the grinder to make a powder
Take 3 Teaspoons Gulkand
Add the Elaichi And Saunf to the Paan juice that we made earlier
Add Gulkand
Mix all the Ingredients well and keep it in the fridge till we prepare the milk for Paan Icecream

You may add some flavoured saunf on top of it.My paan ice cream is somewhat pinkish in color because I have spread Colored Saunf on top of it and when I mixed it the color had spread...But I loved this color.If you want true green color dont spread saunf on the top of icecream while freezing it.
